Sweet Beginnings: New Haven’s Claim to the Lollipop

New Haven’s culinary legacy goes far beyond pizza and hamburgers. In the early 1900s, the city also became the birthplace of a treat that would delight sweet tooths for generations: the modern lollipop.

In 1908, George P. Smith of the Bradley Smith Company began selling hard candies on sticks, whimsically naming them ā€œlollipopsā€ after a racehorse he’d seen called Lolly Pop. Hoping to trademark the name, Smith applied to the U.S. Patent Office—only to learn that ā€œlollipopā€ had already appeared in 19th-century British dictionaries.

Not one to give up, Smith tried again years later, this time tweaking the name to ā€œLolly Pop.ā€ On October 13, 1931, his persistence paid off when the new version was officially trademarked. Though the Bradley Smith Company closed in 1938, its sweet innovation had already taken hold.
